Garlic spaghetti squash


1 small spaghetti squash (about 3lb)
2-3 cloves garlic,  Chopped
2tbsp butter
1/4 cup parsley (or basil) chopped
1/4 cup parmesan cheese

Preheat oven to 375

Poke a couple holes in top of squash so steam can get out.  Put in small baking pan and cook 60 min. Once finished let cool 10 min.


Slice squash in half.  Pick seeds out with fork.   Shred squash out.

Heat butter in large saucepan on med – low. … add garlic cook a couple min until fragrant.  Add parsley, shredded squash, salt to taste into pan with butter.  Toss. Add parmesan cheese and toss … Heat for a couple mins. 


Serve and enjoy
