Carrot Soup


It isn’t much to look at but it is yummy & good for you.  Plus it’s super easy to make.

1 small head of cauliflower
1 bag of carrots (1-2 lbs)
1 tbsp tarragon leaves
1 small onion, chopped (optional)
Water (or chicken broth)
Olive oil
Parsley for garnish (optional)

In a large pot put a generous tbsp of olive oil.  Heat on med-high.

Add chopped onion and tarragon leaves & a few shakes of pepper.

Chop up cauliflower and peeled carrots.  No need to be fancy just med pieces and throw them in the pot. 

Cover with water or chicken broth just above the veggies.   **The more water or broth the thinner the soup.

Bring to a boil and then turn down to simmer until veggies are tender.  Approximately 20-30 min (faster if cut into small pieces).

Ladle soup into blender and puree.  **usually takes a few batches.

Wha-la!     Carrot soup.  Yum!!

Note: the more carrots you use the sweeter the soup. 

A small cauliflower & 1lb bag of carrots yields approx 2qts of soup.

I like lots of pepper in mine so I sprinkle more on in my bowl. .. also a dollop of sour cream is good too.

Great with side of French bread or blue corn chips.

    As you already know, 5 lbs. of carrots and two very large cauliflowers makes a LOT of soup. But, we’re enjoying it. I used the portable blender you put me on to, and it worked great!
