Cool broccoli salad


This is a quick and easy, relatively cheap dish…great cold dish for hot summer days. 

2 large heads of broccoli (one bunch from store-4 stalks)
8 slices cooked bacon
1 small red onion (more or less)
1/3 cup light mayonnaise
1/3 cup low fat plain Greek yogurt
2 tablespoons red wine vinegar
2 tablespoons sugar
1 1/3 cup sharp cheddar cheese
1/4 cup dried cranberries

In large bowl combine broccoli florets, bacon, and chopped red onion

In small bowl whisk together the mayo, yogurt, red wine vinegar,  & sugar.

Combine mix with broccoli and onion.

Add cheese and cranberries. Toss to mix….

Cover and refrigerate until ready to serve.

*** I used a mix of dried berries.  You could use whatever you like. .dried apricots,  dried pineapple, whatever is sweet and yummy to you.

You could also add walnuts or cashews
