1 box of pasta, cooked
1 pint grape tomatoes, halved
1 (10 oz) bag frozen peas, thawed
1-2 lemons, juice and zest
1 cup cream
1 cup chicken broth
3 garlic cloves, minced
Salt & pepper
1 tbsp olive oil
1/2 cup Parmesean cheese
Make pasta according to box and set aside.
In large saucepan heat olive oil on med-high heat and add garlic, be careful not to burn it. Cook about 1-2 min.
Add cream, lemon juice, salt, & pepper and bring to boil. Simmer until thickens, about 15-20 min. Stir often.
In large bowl combine pasta and sauce. Add remaining ingredients. Toss.
Serve w parsley garnish or lemon slices.
**I do not like peas…so I use a can of chick peas…I also add water chestnuts. You can also add black olives…. Really anything you like that goes with lemon ….
